Routine inspection

- Hand washing stations fully supplied with hot/cold running water, liquid soap and paper towels in dispenser.
- All under counter coolers are at or below 4C. Food in inserts measured at or below 4C. Upright fridge is at or below 4C.
- Just delivered Sea food observed to be from approved source and in right temperature at the time of inspection. Food storage practices observed to be satisfactory. Food covered and properly labeled.
- General sanitation of kitchen is satisfactory.
- Kitchen floor observed to be clean and free of food debris even in lunch rush.
- QUAT sanitizer measured 200-400 ppm in spray bottles. Wiping cloths stored properly. Used cloths stored in separate bin.
- Dishwasher final rinse sanitizer measure 50-100 ppm chlorine.
- Cutting board sanitizing discussed with staff. Manual dish washing sink maintained.
- Garbage area maintained.
- Ice bucket is clean and ice scoop stored in sanitary container.

No obvious sign of pest activity observed at this date. Pest management is conducted for whole facility by a pest management company.

Important Reminders:
1- Some Back splash tiles on the wall between the kitchen main section and dish washing area are missing and/or require replacement or repair. Please ensure tiles are installed and easy to clean.
2- Floor tiles observed to have cracks which make adequate cleaning difficult. Consider replacing or repairing floor tiles so that it is impervious and easy to clean.
3- Ventilation grid above the oven range observed to have accumulation of dust. Ensure to clean and maintain.
