-Only sweets stored at the front area now. Ensure that written records are kept to ensure that food is kept there for a maximum of 2 hours. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. Bleach solution was at 100 ppm. Dishwasher final rinse temperature reached 74 C at the plate. General sanitation was satisfactory.
