Observation: Rodent droppings observed throughout the facility in the following areas:
1. In front service area behind the counter.
2. In front service area flooring around unused chest freezer.
3. Throughout area where large pots and cookware are located.
4. Inside the bins with coloured lids and throughout undercounter shelving where paper towels are placed.
5. Inside the corners of the washroom.
6. Around packaged cardboard located outside the back walk-in cooler (on the silver platform)

No droppings observed on food contact surfaces at time of inspection.
Corrective Action(s): Some are new, most are older and discoloured. Remove all droppings by saturating with a 1:10 dilution of bleach (1 part bleach, 9 parts water). REMOVE ALL unnecesary equipment that is not needed on premise, especially the soiled / dirty pizza trays near the back entrance since they are not needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Large wheeled container holding pizza trays are saturated with grease and ash.
2. Flooring underneath cook line needs to be swept and mopped thoroughly as it contains rodent droppings and debris.
3. The soiled pizza tray container underneath the pizza / dough work surface contains accumulated grime and debris.
Corrective Action(s): 1. Remove all pizza trays from container and thoroughly wipe the area. Degrease area and thoroughly sanitize with bleach.
2. Sweep the flooring underneath ovens, cook lines, and prep coolers.

Your facility should be in good sanitary condition to prevent rodents from being attracted to your work areas.

- Stand-up freezers at -18C or below

- Food items stored at least 6" off the floor
- Food products stored inside food grade container with lid or inside original packaging
- Bleach sanitizer spray bottle at 200 ppm
- Two-compartment sink used for washing, rinsing, sanitizing. Operator asked and demonstrated how to formulate a sanitizing compartment
- Permit posted
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels

Catalogue what equipment is not needed on premise and remove it if it is not used (e.g. large pots, used / old / dirty pizza trays (next to pots)).

A follow-up inspection will occur to ensure that sanitary conditions and pest control measures have improved. Send invoice for professional pest control company to the Environmental Health Officer.
