Observation: Large prep cooler is maintaining ambient temperatures of 8-10C.
Corrective Action(s): Repair/adjust this cooler so it is able to maintain temperatures of 4C or less. Do not store any perishable foods in this cooler for more than 2 hours until a reinspection has been conducted and approval has been given by the health inspector. - High temperature dishwasher is available. Final rinse temperature reached 76.4C at the plate level.
- Two glasswashers are available at the bar area. 12.5-25 ppm iodine sanitizer detected.
- 200 ppm Quat sanitizer spray bottles available throughout kitchen and bar areas
- Date system in use for food
- Food storage practices are good
- Drink dispenser guns and holders are satisfactory
- No signs of pests observed during inspection

*Door at the reach-in cooler does not close tightly due to broken spring, allowing cold air to escape. Operator is looking into finding replacement parts or replacing whole door. Monitor the temperatures and ensure temperatures do not exceed 4C. Ensure perishable foods are not stored at temperatures greater than 4C for more than 2 hours. Contact the health inspector once repairs have been completed.
