Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer in spray bottle was found to be at 10ppm concentration..
Corrective Action(s): All sanitizers must be atleast 100ppm concentration at all times. Operator prepared new sanitizer solution during time of inspection which measured at 100ppm concentration. Ensure to either replace sanitizer solution on regular basis so the sanitizer solution always atleast 100ppm as required.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Thorough cleaning is required throughout facility in the following areas:
1. behind cooking line
2. behind dough mixer and stainless stain counters
3. under hard to reach areas and shelves in walkin cooler. Walls of walkin cooler need cleaning.
4. chest freezers need cleaning and defrosting.
5. back storage area needs to be reorganized and cleaned.
Corrective Action(s): All of the above noted areas need to be cleaned on routine basis. Followup inspection to be conducted once cleaning has been completed.

Comments

Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
Insert cooler at 0c. Walkin cooler at 4c. Under the counter cooler at 4c.
Stand up cooler located next to chest freezers at 4c.
Chest freezers at -18c.
Pest control is in place and inspections are being done by APNA pest control on monthly basis.
There were no signs of pest infestation during time of inspection.
All foods were found to be located off the floor.
Operator onsite has food safe certification however, it is recommended that employees also get food safe certification when operator is absent from premises. Note: there must be at least one person with food safe certification onsite at ALL times.

The following requires operators attention:
1. see above noted violations.
2. Ensure to have all food ingredients in foodgrade containers with covers to prevent foods from contamination.
