306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: * Ceiling tiles still grimey and require immediate cleaning attention to remove build up of grime/debris and dust. Also, cleaning in walk-in cooler under racks around legs and rack shelving still has build up of grime/debris Corrective Action(s): * Thoroughly clean ceiling tiles in kitchen to remove any build up. Also, operator replacing walk-in cooler shelving as the current shelving rusty and not very cleanable. Ensure new shelving food grade (eg. stainless steel) and provide wheels on shelving for easier moving during cleaning process and to allow more thorough cleaning to occur Violation Score: 3 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19] Observation: * Dry storage shelving is wooden and not very cleanable. Operator to replace these with food grade shelving that is easy to clean (eg. stainless steel, etc) and maintain. Back dry storage shelf also needs upgrade. Walk-in cooler shelving not in good working order and requires upgrade too. These shelves are difficult to clean/maintain and food particles stick easily to these rusty shelves. Corrective Action(s): * Upgrade wooden dry storage shelving with food grade shelving that is easy to clean/maintain (eg. stainless steel). Back dry storage shelving can be refinished (with hard surface material) as it is for paper products only. Replace walk-in cooler shelving with shelving that is food grade and easy to clean/maintain Violation Score: 9
