General Comments:
All coolers are below 4 degC
Freezers are below -18 degC or the foods in them are frozen
All hotholding is above 60 degC. Hot foods are monitored with the use of timers.
Condiments are time stamped; bacon has a time stamp.
First batch of burgers are probed to ensure minimum cook time has been met.
Temperature logs are maintained online using the Brandm8 system.
Handsinks are fully equipped.
Cloth sanitizer solution had 100ppm chlorine in it and it was time stamped; Quats in the spray bottles are at 200ppm and have time stamps.
Manager on duty has FS level 1 or equivalent certification
Discussed dishwashing procedures. Quats used for sanitizing dishes in the 3rd sink.
Water filters are changed monthly. Time stamps noted on the filter cover.
Orkin Pest control company is on contract. Last service report reviewed. No concerns noted.
