Repeat violation ***. Operator will test out cooler curtain and will verify if a technician is required for repairs.

- Staff demonstrated proper manual dishwashing procedures - drying rack in place
- Sanitizer buckets were <50 ppm chlorine (***violation noted above)
- Dishwashing sanitizer was 200 ppm QUATS
- Chicken nuggets and patties noted 63 C to 71 C
- Cooler units: <4 C (**exception noted above)
- Freezer unit -14 C
- Food at prep line inserts were time controlled
- Handwashing and glove use policies in place
- No signs of pest activity observed; contracted pest control company through Wal-Mart provides service routinely
- General sanitation satisfactory
