Observation (CORRECTED DURING INSPECTION): Food debris observed on one knife stored on the magnetic strip and on the bow of the dough mixer.
Corrective Action(s): Clean and sanitize the aforementioned knife and dough mixer. Ensure food equipment is cleaned and sanitized properly after use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Quats sanitizer spray bottle was measured with 0 ppm Quats. The test stripe showed 200 ppm then turned to 0 ppm after 3 seconds. Operator stated there might be a mix of Quats solution with vinegar and bleach solution in the bottle.
2. Low temperature dishwasher dispensed 0 ppm bleach sanitizer at the plate level.
3. Glass washer dispensed 0 ppm iodine solution at plate level.
Corrective Action(s): 1. Operator discarded and refilled the sanitizing spray bottle with 200 ppm Quats sanitizer. Do not mix chemical solutions together as it may decrease the efficacy of the food contact surfaces sanitizer.
2. Operator switch out the chlorine sanitizer stock bottle and primed the line for low temperature dishwasher. 100 ppm bleach sanitizer was measured at the plate level. Clean and sanitize all plates and utensils on site.
3. Clean and sanitize all glasses in the dishwasher. Do not use the glass washer until serviced and iodine concentration verified.

Observation: 1. Hand washing stations located in the kitchen and bar area were not provided with any single use paper towels.
2. The hot water tap for the hand washing station at the end of the cook line was broken and unable to be turned.
Corrective Action(s): 1. Provide paper towels at each of the hand washing station. Hand washing stations must be properly stocked at all times.
2. Service / fix the hot water tap to ensure hot running water is provided at aforementioned hand washing station.
