Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine residual in the surface sanitizer rag bucket.
Corrective Action(s): Staff added bleach during inspection. Surface sanitizer achieved 100 ppm chlorine residual.

Observation (CORRECTED DURING INSPECTION): No liquid soap in the handsoap dispenser at the front handsink.
Corrective Action(s): Handsink must ALWAYS be equipped with liquid soap, paper towels, and hot /cold running water. Staff refilled soap.

Observation: 1) Food debris (cookie bits) all over the floor in the front area by the pizza ovens
2) two cookie cutting machines have blackened filthy grease on the rotary spinner component
3) Boxes are stored everywhere, from the front of the premises to the kitchen prep area.
Corrective Action(s): 1) Clean all above mentioned areas thoroughly
2) Do not store boxes in your food prep areas, keep them all in one space and ensure they are always off the floor.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) Two wooden tables are not smooth/easy to clean. They are raw wood and do not have a smooth finish on them.
2) Two cookie cutting machines are not easy to clean. They do not fit in the sinks and there is a lot of oil/blackened greased built up on the rotary spinning part. Even thought the staff said that this part does not touch the food, there is still a chance that food may come into contact with it.
Corrective Action(s): 1) Either put a finish on the tables so that they are smooth/easy to clean, or remove them.
2) Provide a plan to wash/rinse/sanitize these cookie cutting machines. If they cannot be properly disassembled, cleaned/sanitized, then they will need to be removed and you will need to find another method of cutting your cookies.

Walk in cooler at 3.2 deg C
(This is the only cold holding unit in the entire premises. Walk in cooler was barely half full. The premises is mostly used to make cookies, but there are some pizza ingredients available in the walk in cooler).
Thermometer present inside walk in cooler
3 compartment sink on site with bleach available to sanitize. No dishes being washed at time of inspections.
**Prep cooler in front area is not functioning. No foods are stored inside.**
Washroom handsink has liquid soap, paper towels, hot/cold running water
