Observation (CORRECTED DURING INSPECTION): Pesto sauce found being stored on counter.
Corrective Action(s): Pesto sauce is to remain refrigerated at all times. Ensure that there is room in the line cooler for it or store in walk in cooler. Staff said that it had just been filled within the hour. Pesto was placed in the walk in cooler.

All fridges are maintaining foods at 4 degrees C. or colder. Ensure that lids are placed on foods in line cooler during slow times.
Walk in freezer is -18 degrees C. or colder.
Quat sanitizer in spray bottle and sink measured 200 PPM quat residual. New bottle required if the current one cannot be cleaned adequately.
Provide place for staff to put their belongings so that they do not hang there coats on the dry storage rack.
Hot foods in warmers measured 60 degrees C. or hotter.
