Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer was detected at the plate surface during final rinse of the dishwasher.
Corrective Action(s): The dishwasher sanitizing chemical was primed at the time of inspection. Tested 100 ppm. Ensure to test chlorine daily and make the required adjustments.

304 - Premises not free of pests [s. 26(a)]
Observation: Minor fruit fly infestation noticed in the bar and back storage areas
Corrective Action(s): More cleaning and sanitizing requried to clean-up any beverage spills. Keep the sink drains clean.
Do not leave empty beer bottles on the counter tops as they can attract fruit flies. ( immediately).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Slime build up noticed in the middle of the walk-in cooler floor from beer lines dripping (??). General sanitation of the walls, fans
and door is poor.
Corrective Action(s): Remove all beer kegs and wooden pallets to thoroughly clean the walk--in coooler floor to remove all slime build up. The black drain pipe must discharge inside the drain (i.e. no surface discharge on the floor) as it creats unsanitary conditions. ( By July 31, 2019).

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): Several empty buckets or Ecolab chemical products were stored in the dry food storage area.
Corrective Action(s): All buckets and a bag of road salt was removed from the dry storage room at the time of inspection. Never store any chemicals among the food products.

Comments

* No pest activity noticed at the time of inspection, however the dry storage room and freezer storage areas must be thoroughly cleaned to remove
any old droppings. Remove snap traps from the walk-in cooler.
* Proper chemicals must be used to clean the walk-in cooler walls. Ensure all walls are finished with easily cleanable and non-absorbent materials.
* A tray of rotten tomatoes and some wilted/rotten lettuce and broccoli were discarded from the walk-in cooler at the time of inspection. Ensure to check the condition of all produce
in the coolers.
* Quats test papers not available on site to test Oasis 146 ( quats sanitizer) on a daily basis. Quats from the dispenser is not being tested at this time.
* Clean floors throughout the restaurant especially underneath and behind the equipment.
*Quats sanitizer was labelled wrong ( corrected during the inspection).
FAILURE TO ADDRESS THE ABOVE ISSUES WILL RESULT IN FURTHER ENFORCEMENT ACTION.

Quats sanitizer at the dispenser tested 200 ppm.
Bar washer iodine tested: 25 ppm.
Hand wash stations supplied with liquid soap and paper towels.
Temperature logs are up to date. However, you must write down the sanitizer levels
for dishwasher, bar washer and quats dispenser at least once a day.
Liquid soap and paper towels available at the hand sinks.
