Observation (CORRECTED DURING INSPECTION): 1) Sanitizer spray bottles contained 50 ppm QUATS. Staff informed that the solution was made over the weekend.
2) The chemical dishwasher had no detectable sanitizer. The container had run out.
Corrective Action(s): 1) Staff made fresh sanitizer spray solution, measuring at 200 ppm QUATS, at the time of inspection. Ensure sanitizer is made fresh everyday and checked frequently to maintain 200 ppm concentration.
2) Operator brought a new sanitizer bottle at the time of inspection. Re-wash all dishes and utensils immediately.

Observation (CORRECTED DURING INSPECTION): 1) Paper towels are not accessible in a sanitary manner at the front hand washing sink.
2) The hand washing sink in the kitchen was blocked with a strainer.
Corrective Action(s): Strainer was removed at the time of inspection.
Install a paper towel dispenser at the front hand washing sink. Date to be corrected by: May 31, 2023

Observation: There is an overall lack of sanitation in the facility.
1) The ventilation hood has build up of grease.
2) Hard to reach areas around fryers and the grill have build up of food debris and grease.
3) Cooler shelves, seals, and handles have food debris build up.
4) The ice machine has build up of grime around the water tray and crevices of the chamber.
5) The back storage area is cluttered, broken glass containers are kept by the mop sink in a box.
Corrective Action(s): Thoroughly clean the facility and all equipment. Discard garbage timely and remove all items not required for business function. Maintain sanitation logs for regular cleaning. Stop the use of the ice-machine until it is thoroughly cleaned and sanitized. Inspector will return to follow-up. Date to be corrected by: May 31, 2023
