Observation: Walk-in cooler shelves, compressor area and floor observed dirty. Areas of the floor, especially along the walls and at shelf legs excessively dirty.
Hard-to-reach areas of the bar floor area observed dirty.
Corrective Action(s): - Walk-in needs a minor reset from a cleanliness perspective. Move the shelves to clean the floor along the walls in this area. Clean the shelves themselves while you're at it.
**Make sure staff continue to clean in a detailed manner that includes moving equipment etc. to get to the hard-to-reach areas for cleaning, especially in the bar area where liquid sugars are significant. This will reduce the potential for fruit fly infestations.

Comments

- Make sure to change the sanitized cloth bucket multiple times during the day such that the chlorine bleach residual is at least 100 ppm.
- Display and prep coolers all below 4 C and look very well organized and clean.
- Dry food storage and most heavily used shelves in kitchen area look organized and clean.
- Freezers all below -18 C (frost building up in a couple of these units).
- Dishwasher measured at greater than 50 ppm chlorine solution.
- Handwash stations all well equipped.

General operation and main areas of this premises organized and well maintained.
