Routine Inspection

- Hand washing station in test kitchen equipped with Hot and cold running water, Liquid soap and paper towel.
- Bleach water for sanitizing available.
- Meat slicer used to slice charcuterie and salamis noted clean and maintained.
- Food in Fridge measured at or below 4 degrees C
- 3-Comp sink maintained.
Food is only cooked and provided from Pizzam Trailer.

General sanitation is excellent.

- Floor clean and storage shelve maintained. Implements stored properly.
- PH, temperature are being recorded for each batch of preservatives.
- Low-Temp Dishwasher in tasting room had 50- 100 PPM chlorine residual at the glass surface.
- Lighting was adequate in kitchen.
- No obvious sign of pest activity at this date
- Display cooler in tasting room measured below 4C.


Wine Production
- General sanitation is satisfactory. Floor noted clean.
- No sign of pest observed at this date
- Food grade hoses and implements are being used in this area.
