Observation (CORRECTED DURING INSPECTION): Observation: Multiple sanitizer buckets measured at 100ppm QUATS concentration.
Health rationale: QUATS sanitizer at concentrations less than 200ppm are not adequate for properly disinfecting food contact surfaces which can allow microbial survival and growth and can cause foodborne illness.
Corrective action: Employees changed solution in all sanitizer buckets. Concentration of QUATS was measured at 200ppm. Operator mentioned that sanitizer solution is changed every 2 hours. Solution maybe changed more frequently to ensure concentration is maintained at 200ppm QUATS solution for adequate disinfection of food contact surfaces.

Comments

Observed during inspection:

1) Temperatures:
-Walk-in coolers at 3.9C (tartar sauce probed)
-Walk-in freezer at -18C
-Chest freezer at -18C
-Commercial stand up freezer (storage) at -18C
-Juice cooler under service counter at 3C
-Milk cooler in beverage station at 3C
-Temperature logs are maintained.

2) Sanitation:
-3-compartment sink equipped with drain plugs for manual warewashing.
-Ventilation hood clean during inspection (due June 2021).
-Ice machine in good sanitary condition with scoop placed outside (NOTE: Ice machine is deep cleaned every month and maintained with a cleaning/sanitation log - GOOD!).
-Dispenser for sanitizer dispensed >200ppm QUATS solution.
-Mop sink area kept in sanitary manner.
-Drink dispenser knobs cleaned daily and in sanitary condition.

3) Storage:
-All foods are covered in storage areas
-Chemicals are stored away from food storage.
-All foods are stored at least 6 inches off the ground.
-All dry storage scoops are placed outside containers.

4) Personnel:
-Staff practicing good hand hygiene (manager observed reminding staff of scheduled hand washing)
-Proper glove etiquette observed.

5) Pests:
-No signs of pests during inspection.
-Abell Pest Control company contracted to monitor premises monthly.
-UV lamp in place in prep area and observed in clean condition.

6) Administration:
-Serve Safe Certified operator on premises during inspection (Foodsafe Level 1 equivalent, expires 09/07/2024)
NOTE: Operating permit not visible during inspection. Operator mentioned health permit has been paid.
