Observation (CORRECTED DURING INSPECTION): kitchen knife being stored in gap between counter and condiments cooler.
Corrective Action(s): This area can not be routinely cleaned and sanitized so do not store knives in this area. Make sure that knives are stored in a proper container, with a bleach/quaternary ammonium solution to prevent microbial growth between uses. Make sure knives are sanitized between each use, raw and ready to eat foods etc.

Observation (CORRECTED DURING INSPECTION): Bowl of cooling chicken on top of ready to eat bean sprouts - no lid/cover in place to prevent contamination of the sprouts from the bottom of the dirty bowl.
Corrective Action(s): All contaminated sprouts to be discarded.
Do not stack foods one on top of the other unless there are proper tight fitting lids in place to prevent both physical and microbial contamination.

Observation: Food debris, spills, splatters in kitchen and walk-in cooler, inside of both microwaves, north-east corner of the cook line behind stove, stove, staff washroom, behind freezers in dry storage room etc.
Corrective Action(s): Premises needs a thorough general cleaning where food spills and splatters or waste accumulations have occurred, including walls, low traffic area of floor, refrigerator door seals etc
