Observation:
Observation #1: Shelving units in walk-in cooler have a build-up of debris/rust. Debris/rust can fall into the foods stored below and contaminate them.
Observation #2: Build-up of grease on tinfoil used near grills. Grease beginning to build-up on canopy filters (cleaned during the inspection). Grease is a pest attractant and fuel for a kitchen fire.

Corrective Action #1: Clean the walk-in cooler shelving units thoroughly.

General Comments
All handsinks equipped with hot and cold running water, liquid soap and paper towel
All (other) coolers operating at </=4 C; freezers at </= -18C. No hot-holding observed.
Bleach sanitizer available in a bucket *Concentration was TOO STRONG. Reduced to 200 ppm. Please use 1/2 teaspoon of bleach in 1 L of water to make 100 ppm bleach solution, as required for sanitizing surfaces. Change the bleach solution every 2 hours or sooner if it becomes dirty. As well, please ensure that all chemical bottles are labelled correctly.
Foods in dry storage are stored 6" off the ground and covered to protect them from contamination
No signs of pests observed. Back door has a screen.
High temperature dishwasher reached > 71C at the plate level upon final rinse cycle (min/max probe thermometer)
Temperature logs for coolers/freezers and dishwasher are in-use
