Employee does not wash hands properly or at adequate frequency [s. 21(3)] (Liquid soap dispenser at the front sushi counter not in good working order. In conversation with food handler, the hand sink is not being used.)
Comments

* A new liquid soap dispenser has been installed in the sushi prep area. Ensure all food handlers wash hands after every chance of contamination.
* Plastic disposable gloves are now being used by food handling staff in the kitchen. Remind staff to always throw gloves after each use..
* Ensure that mayo based dressings are stored in the refrigerator at all times.
*Imitation crab was found stored at room temperature. Ensure to keep imitation crab at 4 C or below. If using to make a big order, ensure to only keep small
quantities in stainless steel containers, which must be refrigerated immediately after use.
