-General sanitation is good -Soap and paper towel present at hand sinks -Coolers < or = to 4C, freezers < or = to -18C -No sign of pest problems noted -Quat sanitizer present in spray bottles, rag buckets and at 3rd sink for dishwashing. Discussed that rag bucket sanitizer should be changed ~ every 2 hrs to ensure proper concentration -Dry storage area in good condition -Hot holding for soups and sauces at > or = to 60C -No issues noted
