Observation: Large pots/containers of warm sauces and soups being cooled at room temp with a fan.
Corrective Action(s): Ensure all food is rapidly cooled within in 6 hours as noted in past inspection. Discussed cooling options with owner.
Other options for food being prepared in advance is to hold at or above 60 C until serving without cooling and reheating steps. Correction Order Issued.

Observation: 1.Cold water faucet knob broken off - can't turn on cold water at 2 comp prep sink.
2. Standing glass cooler noted at 7.5 C
Corrective Action(s): 1.Ensure all sinks have hot and cold water available at all times during operation. Prep sink is required for rapid cooling process of hot foods. Until sink is repaired used 2 comp sink near dishwashing area for rapid cooling.
Correction date: 1 week
2. All coolers holding PHFs must maintain <= 4 C. Temp logs indicate morning temps are 4 or 5 C and > 4 through out the day. Operator has called unit in for servicing and is not holding PHFs in unit for more then 2 hours.
