Observation (CORRECTED DURING INSPECTION): Noted hot holding pizza bags piled on the ground between the wall and the dry storage shelves.
Corrective Action(s): Keep pizza bags stored off the ground in a clean and sanitary manner.

Observation (CORRECTED DURING INSPECTION): Meat slicer was taken a part by staff member for inspection. Noted dried food debris on the inside of the meat slicer. Staff member cleaned and sanitized meat slicer at time of inspection.
Corrective Action(s): Ensure meat slicer is taken a part and thoroughly cleaned and sanitized after each use.

Comments

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (prep cooler, walk in, sliding 2 door...etc)
Chest freezers both less than -18C
No hot holding available at time of inspection. Foods are prepared and served per order.
Overall general sanitation satisfactory. Keep an eye on ceiling, especially around the pizza oven area where grease will buildup quickly.
No obvious sign of pest activity noted at time of inspection. Both screen doors in place over open back doors at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container. Reminded operator to ensure container used to hold scoop for ice is put through the dish washer at the end of each night.
Low temperature dish washer had 50ppm chlorine. Chlorine test strips available on site to check dishwasher sanitizer concentration levels.
All stored foods appeared protected (ie. stored off the ground, covered, light covers in place..etc).
