Previous deficiencies have been corrected from last inspection report:
- Commercial Fume Hood slats have been cleaned, degreased, continue to maintain
- Floor around grease trap has been cleaned
- Handles and surfaces with grease build up has been cleaned
- Chlorine sanitizer solution available, concentration at 200ppm
Note: Display cooler previously used for dry storage, will continue to be used as dry storage as menu has been reduced/ altered, this may be changed if increase in coolers is required
- Ensure temperature logs are taken to monitor temperatures of cold holding units
- Ensure cleaning, degreasing and sanitizing all contact surfaces is part of daily maintenance
- Ensure all contact surfaces are kept in good condition and is easily cleanable
