[s. 14(2)] Observation (CORRECTED DURING INSPECTION): Chicken empanadas were stored in a container outside of a hot holding unit with an internal temperature of 36 C, and one of the inserts in the hot holding unit had a beef dish with an internal temperature of 38 C. Corrective Action(s): Both were discarded. Violation Score: 5

Comments

All coolers were < 4 C. Hand sinks supplied with hot and cold water, soap and paper towels. Bleach solution was at 100 ppm. No evidence of pests. General sanitation was satisfactory.
