Observation (CORRECTED DURING INSPECTION): Observed the following potentially hazardous foods stored in the preparation cooler holding an air ambient temperature of 7.9C:
-Chopped bell peppers internal temperature measured at 6.4C.
-Cheese measured at 7.9C internal temperature.
-Black olives measured at 8.8C internal temperature.
-Chicken, Ham measured at 6C and 5C internal temperature. Operator informed it was put in the cooler an hour ago.
-Diced tomato, red onion, mushroom measured at 4C internal temperature.
Corrective Action(s): Discard the chopped bell peppers, cheese, and black olives.
Store chicken, Ham, diced tomato, red onion, mushroom in a working cooler able to hold an air ambient temperature of 4C or lower.
