Observation (CORRECTED DURING INSPECTION): Observed the following potentially hazardous foods stored in the preparation cooler holding an air ambient temperature of 7.9C:
-Chopped bell peppers internal temperature measured at 6.4C.
-Cheese measured at 7.9C internal temperature.
-Black olives measured at 8.8C internal temperature.
-Chicken, Ham measured at 6C and 5C internal temperature. Operator informed it was put in the cooler an hour ago.
-Diced tomato, red onion, mushroom measured at 4C internal temperature.
Corrective Action(s): Discard the chopped bell peppers, cheese, and black olives.
Store chicken, Ham, diced tomato, red onion, mushroom in a working cooler able to hold an air ambient temperature of 4C or lower.

Observation: Observed built-up food debris under plastic beverage rack underneath the shelving units in the walk-in cooler. Observed syrup built-up along the shelving unit of the dry storage racks. THIS IS A REPEAT VIOLATION.
Corrective Action(s): Clean and sanitize the aforementioned areas to prevent possible pest harbourage and/or pathogenic growth. Corrected by: June 3, 2022.

Observation: Light fixture in the kitchen observed to be broken. THIS IS A REPEAT VIOLATION. Preparation cooler measured at 7.9C air ambient temperature.

Follow-up Inspection conducted today for report#JCHY-CDVU5G.
The following violations in report#JCHY-CDVU5G have been corrected.
-Paper towel and soap dispenser at the handwashing sink in operational condition.
-Underneath the stainless steel worktable, front of house table, pizza oven, dry storage racks, 3-compartment sink have been cleaned and sanitized of previous built-up of food debris.
-Chlorine sanitizer buckets in the kitchen and pizza preparation area measured at 100ppm chlorine.
-Can opener blade observed to be in sanitary condition. Operator informed that in-use utensils are washed and sanitized every 2 hours.
