Observation (CORRECTED DURING INSPECTION): Dishwasher was not properly sanitizing again. 0 ppm chlorine residual detected after rinse cycle.
Corrective Action(s): Sanitizer line was primed again, and 100 ppm chlorine residual was detected after rinse cycle. As previously discussed, ensure to check the dishwasher sanitizer level with your test strips on a daily basis.

Observation: Pest control report from November 10th indicates there is an active mouse problem.
Corrective Action(s): Continue with bi-weekly pest control servicing until mouse problem has been resolved. Email pest control reports to the health inspector.
Keep all food off the floors and in properly covered, pest-proof containers.
Clean and sanitize all areas on a daily basis
Monitor for pest activity (such as new mouse droppings) on a daily basis, cleaning and disinfecting affected areas as needed

Comments

- New prep cooler has been ordered, expected to arrive in about 2 weeks. Invoice available for review. In the meantime, staff have been time-tracking all food items stored in inserts. Time-tracking log available for review - good. All food items stored in broken prep cooler inserts are used up within 1 hour or discarded. 1-hr time limit was established by operator.
- Ventilation canopy filters and floors behind/underneath cooking equipment have been cleaned and sanitized.
- Pest control company has been onsite (twice so far) for servicing since previous inspection. Mouse activity noted - ensure to continue monitoring for any mouse droppings and clean and disinfect affected areas as needed. Continue with pest control servicing on a bi-weekly basis until the issue has been resolved, and email all pest control reports to the health inspector.
