Observation: Found cardboard boxes being reused to hold food items that have been washed or processed.
Corrective Action(s): Discard cardboard boxes after the original items in the box have been used or removed. Place washed items (i.e. tomatoes) and foods that have been processed (i.e. cut, placed on skewers, etc) into food grade containers that are washable.

- Hot holding drawers were 60 C
- Hot holding steam table was 62 C
- Salad table was 6 C, inside was -1 C ( items discarded after 2 hours)
- Hand sinks had liquid soap, paper towel , hot and cold water
- spray bottle had 200 ppm quat
- wiping rags found in 100 ppm chlorine
- dishwasher had a final rinse of 72 C at plate
- no signs of pest activity noted during inspection
- general sanitation is satisfactory
- staff are FOODSAFE certified.
