Observation: Ventilation hood requires cleaning to remove grease buildup. Operator stated that it is due for professional cleaning and that they have a company scheduled to clean it next Tuesday.
Corrective Action(s): Clean the ventilation hood panels to remove the grease; Correct by February 19, 2020.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Hot-held rice was at or above 60 degrees C.
100 ppm chlorine sanitizer was available in the bucket with wiping cloths in the kitchen and a labelled spray bottle in the front service area.
Dishwasher final rinse temperature was at 78 degrees C (71 degrees C or hotter) at the plate level.
2-compartment sink and single compartment sink with overhead sprayer were in good working order.
Refrigeration temperature records were being maintained.
Ice machine was in a clean condition.
No signs of recent pest activity were present at the time of inspection.
Second Operator stated that they retook a FOODSAFE Level 1 course and are waiting to receive their certificate.
One of the Operator's with valid FOODSAFE Level 1 training was available on shift.
Permit to operate was posted in a conspicuous location.
