Observation (CORRECTED DURING INSPECTION): Dim sum items left at room temperature prior to steam and serve. Discussed with operator. He is aware of 2 hour limits.
Corrective Action(s): Reduce volumes of items left at room temp. and make sure staff understand that beyond 2 hours (lunch rush) these items must be discarded, not put back in cooler.

New shelving purchased for walk-in food storage. New stainless steel sheet backing installed at dishwash station. Good.
**Next phase improvement should be smoothing out wall above the stainless steel, then painting. Also, wall area around double prep sinks/handwash station, including tile work in state of early disrepair. Long-term physical improvements should include repair to this area.

Make sure staff keep lid down on top part of prep cooler to ensure foods in inserts stay below 4 C and keep food at safer temperatures.
Make sure organics bin is cleaned at the end of the day, including a spray down inside out and a cap of bleach is left in bottom to deter fruit flies from breeding there during breeding season.
Make sure employee washroom is de-cluttered to allow all areas to be more effectively cleaned.
Make sure laundry station is better cleaned (behind under and around this equipment). Some food debris is building up in this area and may promote pest activity.
