Comments

- Inspection conducted to re-open kitchen. Renovations for kitchen completed in accordance with approved floor plans.
- Exterior wall for new walk-in cooler and freezer area still needs to be put up; Freezer and cooler doors will be locked and are equipped with door sweeps. OK.
- All new coolers were below 4C
- All new freezers were below -18C
- Hand sink in pizza area was equipped with a stainless steel splash guard - good.
- All existing coolers and freezers were at appropriate temperatures
- Dishwasher dispensed 100 - 200 ppm chlorine to dish surface - good. Test strips available for monitoring
- Quats sanitizer solution available at 200 ppm in several spray bottles
- General sanitation excellent. No construction materials leftover in kitchen at time of inspection.
- Temperature logs in place

**Kitchen approved to re-open.
