Observation: The additional prep cooler in the middle of the kitchen measured at 8C at ambient temperature. The operator was aware of the issue and has called a technician for service. No food items were stored inside this cooler.
Corrective Action(s): Fix the cooler and ensure that it maintains temperature < or = 4C at all times. Do not store any potentially hazardous food items in the meantime.

- All handwashing stations (front/back) supplied with cold/hot running water, soap, and paper towels.
- Surface sanitizer available in designated spray bottles at 200ppm QUAT concentration.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200ppm QUAT concentration.
- High temperature dishwasher achieved 74C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding units > or = 60C
- Thermometers available in all coolers and freezers.
- Daily temperature logs must be kept up to date.
