Observation (CORRECTED DURING INSPECTION): Quaternary Ammonium concentration for sanitizer buckets to store wiping rags was at 50 ppm - corrected during inspection.
Corrective Action(s): Operator to ensure sanitizer is in adequate concentration (quaternary ammonium at 200 ppm to allow effective disinfection of rags

Observation: Cardboard boxes were being used as trays to hold glassware's in front counter area. This is not a sanitary practice.
Fly strip was being used in dry storage with open cases of vegetables underneath. Operator to remove fly strips from food area as it can be a source of contamination
Corrective Action(s): Operator ensure food grade trays are used to store glassware. Correct 06/2019

Sanitizer Quats at 200 ppm available from sanitizer dispenser
Cold holding units were at 4 C / 40 F or colder
Freezers were at -18 C / 0 F or colder
Hot holding unit was at 60 C / 140 f or hotter
Dishwasher reached 74 C / 165 F internal temperature for final rinse
Monitoring log for temperature and cleaning was available and up to date
Note: Cleaning schedule should be updated to incorporate cleaning of hard to reach area under upright cooler and freezer
