Observation: Low temp. dishwasher was not able to produce chlorine sanitizer at final rinse cycle.
Corrective Action(s): Do not use the dishwasher until it can be demonstranted to produce at least 50ppm chlorine level at plate's surface. Manual dishwashing to be followed.

Comments

- Handsinks are maintained with hot & cold running water, liquid soap and paper towel
- >200ppm QUAT sanitizer present. Ensure to keep the cloths inside the sanitizer bucket. Do not leave them out on the counter.
- Temperatures of all refrigeration units were adequate (<4C for coolers and <-18C for freezers)
- Temperature of hot holding was >60C
- Storage of foods prevents cross-contamination
- General sanitation is adequate. Some dust accumulation noted on the hot water tank was discussed with the operator
