Hand wash stations were adequately maintained.
Quats sanitizer in spray bottle was at 200 ppm.
Buckets of bleach (for storing wiping cloths) were at 100 ppm.
Freezers were at -18 deg C or colder.
Coolers were at 3-4 deg C.
Hot holding for miso and rice was above 60 deg C.
Temperature log available and up to date.
High temp. dishwasher reached 73 deg C at plate surface.
Dry storage area was organized. All foods and food-related items were stored on shelves.
Sushi Bar:
Hand sink supplied with liquid soap and paper towels.
Freezer was at >-20 deg C.
Sushi display cooler was at 2-3 deg C.
Bleach solution available for storing wiping cloths.
No pests noted at time of visit. Ensure there is pest control monitoring in place.
Overall sanitation of the premises was in satisfactory condition at time of inspection.
