Observation (CORRECTED DURING INSPECTION): Internal temperature of BBQ pork and BBQ chicken measured at 35-40C. Hot holding unit measured at 60C. According to the product flow, it was determined that these BBQ meats were in the temperature danger zone for 30-45 minutes. BBQ meats were reheated to 74C internally at this time.

Observation (CORRECTED DURING INSPECTION): Observed in-use utensils stored in an ambient water temperature. In-use utensils re-washed and sanitized at this time. Ensure in-use utensils are stored in clean empty container or water that is lower than 4C or higher than 60C.

All coolers measured at 4C or less.
All freezers measured at -18C or less.
No sign of recent pest activity noted at this time. Routine professional pest control in place.
Food contact surface sanitizer pails measured at 100-200ppm chlorine.
High temperature dishwasher's sanitizing cycle noted at 71.1C at the plate level.
Glass washer's sanitizing cycle noted at 12.5 ppm iodine.
