Comments

Routine inspection conducted and the following were noted:
All cooler units at 4C or below.
Food items stored in the front inserts behind the wok station were 4C or below.
Hot holding of food items at 60C or higher.
Standup freezer at -10C. Ensure unit is capable of maintaining frozen food items less than -18C.
Chest freezer at -18C.
High temperature dishwasher achieved a final rinse temperature of at least 71C at plate level for 2 consecutive cycles.
Food items stored at least 6 inches off the ground and properly covered.
Pre-mixed quats solution used as sanitizer. Concentration was at 200ppm.
Large containers that do not fit in the high temperature dishwasher are sanitizer in the 2-compartment sink. Ensure a 100ppm chlorine solution is used by diluting 25ml of regular bleach with 4 liters of water.

Contract with professional pest control company in place. Ensure pest reports are maintained on-site. No pest activity noted
