Routine inspection is conducted
- Hand washing stations fully supplied with hot/cold running water, liquid soap and paper towels in dispenser.
- Prep coolers measured at or below 4C. Walk-in cooler measured at or below 4C. Food stored in walk-in cooler noted well organized, raw/cooked separated and properly labeled. Raw meat noted lower than other food on racks. Walk-in cooler was clean, at less than 4C
- All other cooling units measured at or below 4C.
- All freezers measured at or below -18C.
- Thermometers provided in all coolers and freezers.
- Temperature monitoring log is to be kept updated daily.
- Floor noted clean and free of grease and build ups. General sanitation is satisfactory.
- 200 ppm QUAT sanitizer available throughout the facility and spray bottles properly labeled.
- Dry storage maintained. Food stored above the floor.
- No obvious sign of pest activity noted in the kitchen at this time.
- 50-100 chlorine residue detected in Low-Temp mechanical dishwasher final rinse at the time of inspection.
- Ice maker observed clean and maintained. Ice scoop stored out of ice bin.
- General sanitation is satisfactory
