Observation: * Some build up of grime/debris found under food equipment/legs/wheels and bases as well as along baseboard/corners at back door areas; discussed cleaning/maintenance with kitchen supervisor; also, some racks and food equipment (eg. deep fryer inside door, etc) require more frequent cleaning attention; also, some ceiling tiles require cleaning to remove debris/dust
Corrective Action(s): * Ensure all areas properly cleaned and sanitized including under food equipment and bases of equipment, baseboards/corners and hard to reach areas; also, some racks and ceiling tile require cleaning and other food equipment (eg. fryers inside door), etc

Comments

* Glass washer/dish washer had final rinse of 50 ppm chlorine residual at plate surface; ensure these units are primed daily prior to use
* Coolers were 4'C/40'F or colder; buffet line cold-holding was 4'C to 7'C -- operator to monitor and adjust to maintain 4'C/40'F or colder
* Freezers were -18'C or colder
* Hot-holding buffet line was 60'C/140'F or hotter
* Sanitizer was available and ready to use in buckets to store wiping rags
* Monitoring records were available for temperatures; cleaning records were not available -- ensure these are up to date
* Food was covered in storage areas
* Note: some cleaning to be done under equipment/food equipment and floor areas, etc; ceiling tiles too require cleaning in some areas
* Follow up inspection to be done next Wednesday
