Observation: Mould growth was observed in the follow areas:
- within the ice machine
- on the walk-in cooler walls
- on the fan covers of the walk-in cooler
- on plastic containers within the walk-in cooler
Corrective Action(s): Clean and sanitize all the areas noted above. Date to be corrected by: 28 July 2017

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) High temperature dishwasher measured 40C at the final rinse cycle at the time of inspection.

2) (CORRECTED DURING INSPECTION) Detergent was being used in the sanitizing bucket in place of bleach.
Corrective Action(s):
1) Replace the dishwasher. Until it is replaced, wash your equipment in the dishwasher, and manually sanitize the equipment in the pot sink afterwards. Use a solution of at least 100ppm chlorine (5mL of unscented household bleach of 2.5L of water). Equipment must be placed in the sanitizing solution for at least 2 minutes, and then air dried. Do not towel dry. The owner stated that they will replace the dishwasher.

2) Detergent is not a sanitizer. Use a 100ppm chlorine solution (5mL of unscented household bleach in 2.5L of water). Ensure that the detergent is changed out frequently. The owner made up a solution at the time of inspection.
