Observation: Areas observed needing increased cleaning:
- Front area floor under equipment and around hosing to frozen beverage machine extending under the wheeled coffee cart (that can't be moved because the hose is too short), focussing also around the wheels and legs.
- GRILL area. Significant build up of greases on the floor and surrounding structure of this equipment. Grease interceptor troughs could be leaking or not affised properly.
- back corners of track storage and front tracking itself.
Corrective Action(s): Clean up areas as discussed.
Investigate the grill troughs for leaks or blockage.

Note: Salad and sauces cooler (upright) has poor air flow. There are too many boxes on shelves impeding cool air movement from top to bottom. Suggest reducing the volume of boxes in this unit. Open and remove product and breakdown and remove boxes to create move avenues of air flow.
One Quats spray bottle dumped because of very high concentration (above 500 ppm). Source feed ok at time of inspection. Other spray bottles OK at time of inspection. Keep an eye on main feed. Check daily.
Cooling units less than 4 C
hot holding units above 60 C.
Dishwasher ok.
Handwash stations ok.
