Food temperatures ranged from egg @ 13.6 deg.C; tomato @ 6.2 deg.C; chicken @ 7.2 deg.C. Temperature log is maintained, noted under 40F / 4 deg.C this morning. Digital reader on coolers indicated temperature of 42 deg.F (veggie) and 38 deg.F (meat). Potentially hazardous foods must be maintained at 4 deg.C or less at all times. Turn down coolers. Corrective Action(s): Violation Score: 5 303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation: No hot water available at time of visit. Max. temperature addressed at 26.1 deg.C. A minimum of 45 deg.C must be available. Staff indicated after a big load of dishes it takes awhile for hot water to come back. GEN. - Health permit is posted - Undercounter 2-door cooler @ 3.9 deg.C - Walk-in cooler: 3.9 deg.C - Walk-in freezer: -17 deg.C - Hot holding: meatballs @ 62 deg.C; soap @ 63 deg.C - Liquid handsoap + paper towel present at handwashing stations - General sanitation is satisfactory - No signs of pests at time of visit. - Quats Sanitizer in container + dispensing system noted at 200ppm. - Quats test strips present to test sanitizer concentration. Closure Order issued. This facility is hereby ordered CLOSED until a follow-up inspection is conducted by Fraser Health Authority.
