Comments

Follow-up inspection conducted after renovations have been completed. This is a joint inspection conducted with EHO Lisa Kirkham.

1) The following observations were made based on comments from the previous inspection (RPT#: JMAA-BBZRUG).

- Pizza trays have been cleaned and sanitized and the operator has designated a "clean" area for the trays, located to the right of the stove
- Construction equipment and debris has been removed from the facility
- Elevated platform beside the walk-in cooler has been cleaned - excellent
- Dough roller and stand was still present - renovator was called at time of inspection and removed the roller and the stand
- Left-most and center chest freezers will no longer be in use and will be removed by May 24, 2019
- Walk-in cooler compartment at the back has been thoroughly cleaned, all construction debris has been removed. It is now designated as a storage space. Walls and shelving have been thoroughly cleaned
- Paper towel dispenser was installed at time of inspection
- Shelving restored in walk-in cooler
- Faucet at 3-compartment sink has been adjusted, drain plugs are working correctly and configured for washing, rinsing, sanitizing, and air-drying

2) Comments from Initial inspection

A. Temperatures
- Walk-in cooler at 0C
- Prep cooler at 3C
- Soda beverage stand-up coolers at 4C or less
- Stand-up freezer at approximately -14C
- Chest freezers at -18C or below
- Cooling units equipped with thermometers

NOTE: Front display unit will only be used for display of non-potentially hazardous foods

B. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer spray bottle contains approximately 200 ppm chlorine residual
- Quaternary ammonium compound (QUATS) spray bottle sealed and ready for use
- Sanitary condition of facility has significantly improved since the last consultation yesterday - majority of debris from back alley and from the common exterior area have been removed
- Ventilation canopy and area around the stove in good sanitary condition
- New food preparation tables in excellent sanitary condition

C. Storage
- All food products stored separately from chemicals, elevated at least 6" (15 cm) off the floor
- Wooden barricade between dough mixer and back storage room has been removed
- Lighting has significantly improved since pre-renovation levels
- Large metal bin for storing soiled pizza trays is in sanitary condition

D. Pest Control
- Professional pest control company has been hired to conduct monthly audits
- No signs of recent, visible pest activity at time of inspection - good

HEALTH APPROVAL has been granted to operate.
