306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: .
1) Food accumulations, encrusted food, dirt, cobwebs and mould around and inside proofer.
2) Bread slicer has encrusted debris on measure/slicing plates.
3) Shelving/drawers in front service area have significant food waste.
Corrective Action(s): .
1) Premises needs a general cleaning to remove food accumulations, caulking along the floor/wall junctions in the proofer needs to be removed, the area cleaned, sanitized and thoroughly dried before re-caulking.
2) Bread slicer needs to be broken down and thoroughly cleaned and sanitized. make sure that this equipment is routinely, and frequently, broken down/dismantled to facilitate cleaning and sanitizing.
3) Make sure that all drawers, shelves are cleaned (vacuumed) daily to prevent insect and rodent infestation.
