Observation (CORRECTED DURING INSPECTION): Food debris observed on vegetable peelers and deli slicer. Operator stated that slicer was not in use.
Corrective Action(s): Items were cleaned and sanitized at time of inspection. Please ensure that all equipment/utensils/food contact surfaces are maintained in sanitary conditon to limit potential cross contamination.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured 60 degrees C and 10 ppm chlorine in rinse residual at utensil surface. Chlorine sanitizer was available and dishwasher was primed at time of inspection.
Corrective Action(s): Bleach was added manually during rinse cycle and utensil surface residual was measured at 50 ppm chlorine. Please ensure that utensils and/or equipment are re-washed and sanitized.

- Walk in cooler at 1 degree C
- Prep cooler at 4 degrees C (above and below)
- Glass reach in cooler at 2 degrees C
- Front under counter cooler at 3 degrees C
- Walk in freezer at -16 degrees C
- No hot holding at time of inspection. Functional probe thermometer available on site.
- Hand washing stations (kitchen, front) supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Inspection conducted outside of operating hours. Bleach water sanitizer was prepared at 100 ppm chlorine during inspection to be available prior to opening.
- Staff washroom sink adequately supplied.
- No signs of pest activity observed at time of inspection
