Corrective Action(s): Remove the bowl from the bucket of fish sauce. Use a scoop with a handle to scoop up the fish sauce. Store all scoops away from food to prevent cross-contamination.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine sanitizer buckets measured at 100ppm. Low-temperature dishwasher measured at 50ppm chlorine. 2-compartment sink available.
Prep cooler and stand-up cooler measured at 4C or lower. Stand-up freezer and chest freezer measured at -18C or lower.
Meat slicer in sanitary condition. Ice machine in sanitary condition.
No signs of pests observed.

Overall, facility is well organized.
