Observation:
- Heavy Grease built up on the vent, filters, side and underneath the deep fryers.
Corrective Action(s): - Routine Deep cleaning required for the deep fryers to eliminate fire hazards and prevent pest infestation.
- Please make a rouitne schedule for deep cleaning.

Comments

Routine inspction conducted with the presence of the supervisor.

- General sanitation see code.
- Hand sink fully equipped with liquid soap, hot and cold running water, and paper towels.
- 3-compartment sink was in use to clean and sanitize dishware.
- 200 ppm Quats sanitizer available in the third compartment sink and bucket with a wiping cloth. Quats test strips available on-site.
- Walk-in-cooler and prep. cooler below 4 degrees C.
- Walk-in-freezer and under-the-counter freezer temperatures were satisfactory.
- Gravy and other sauce in the hot holding units measured above 60 degrees C.
- Fried Chicken in the hot holding unit meauered above 60C. Manager stated that they also use timers to control hot held food, fried chicken would be discarded after 2 hours.
- All food stored off floor.
- No signs of recent rodent activity was evident at the time of inspection.
- A staff member on shift had a valid FOODSAFE level 1 certificate.

Note: Please schedule routine deep cleaning in the kitchen.
