Observation (CORRECTED DURING INSPECTION): Stir spoons for coffee are not being stored in ice, or properly cleaned and sanitized after use. Spoons are rinsed and placed in clean water (at room temperature) after use.
Corrective Action(s): Discussed with operator during inspection. Ensure these are either properly washed, rinsed and sanitized at least every 4 hours, or are stored in ice water (in a deep cup) during the day to slow growth of microbes.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Mould observed on the outside of one bucket of candied orange peel in the glass-door cooler. Bucket was located under a drip from the condenser unit.
Corrective Action(s): Bucket discarded. Ensure the cooler is serviced to remove any drain blockages by tomorrow - unit must not drain onto food products.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Several bulk bin covers were badly cracked. This represents a potential source of physical contamination for bulk goods, and the covers do not properly cover the food.
Corrective Action(s): Replace all broken covers by next week (4th August 2016).

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): No label was present on the bleach sanitizer bottle. Additionally, the solution inside was measured at well over the required 200ppm (test strips bleached out).
Corrective Action(s): Diluted during inspection. Label added. Ensure bleach sanitizer is mixed at a ratio of one teaspoon of bleach to each Litre of water.

*General sanitation satisfactory. No pest issues observed during inspection.
*Hand sink equipped with warm water, liquid soap and paper towels.
*Note: 3-compartment sink tap has been replaced since initial approval, and no longer reaches all three compartments. Operators have a system for diverting water, but this must be replaced with a working tap that is capable of directly filling all three compartments by the time of the next inspection.
*Bleach sanitizer available (see violations section).
*Low-temperature dishwasher provided a sanitizing rinse containing 50ppm chlorine.
*Organization of food in coolers and storage racks satisfactory. Covers provided for baked goods at front service area.
*Hot holding of soup measured at 60 C or hotter.
*All cooler and freezer temperatures satisfactory.
*Tools and utensils generally stored in clean condition.
*Note: ensure minor dried-on debris is removed from undersides and dough hooks of mixers by the end of today.
