Observation (CORRECTED DURING INSPECTION): Small sanitizer bucket in front of house measured at 100ppm Quats. In orderto properly and adequately disinfect food contact surfaces concentration must be 200ppm.
Corrective Action(s): Replace the trays with new sanitizing solution. To ensure concentration is at 200ppm solution should either be replaced more frequently or tested using QUATS ecolab test strips.

- Employees demonstrate good personal hygiene
- Two door standing cooler in the back functioning at <4'C and equipped with accurate thermometers
- Two door standing freezer operating at <-18'C
- Under counter coolers in front are functioning at <4'C
- Temperature logs done daily
- Mechanical high temp dishwasher tested 73.9'C final rinse at the plate
- Quats based sanitizer present in buckets in the back and front bar
- No signs of pests at time of inspection
- General sanitation of premise was satisfactory at time of inspection
- Food stored 6" off the ground
- Ice scoop stored separate from ice machine
- Cleaning agents stored separate from food product
- Food dated to facilitate FIFO
