Observation (CORRECTED DURING INSPECTION): Deli slicer stored with food debris from previous night. Slicer was disassembled, cleaned, and sanitized at time of inspection. Note: This is a repeat violation. Further failure to comply may result in enforcement action.
Corrective Action(s): Ensure that all staff are made aware of the cleaning and sanitizing requirements for the deli slicer. It is recommended to include slicer cleaning and sanitizing as part of a sanitation checklist for every shift/day, depending on use. Ensure that slicer is properly cleaned and sanitized following each use.

- Low temperature dishwasher measured at 52 degrees C and 100 ppm chlorine at utensil surface. Chlorine test strips available on site.
Note: New ice machine has been obtained since previous inspection. Reminder to follow manufacturer's directions for cleaning and sanitizing procedures, as well as frequency. Reminder to keep ice scoop stored in a sanitary manner at all times.
