QUAT sanitizer spray bottle measured 0ppm. No detectable
QUATs.
Corrective Action(s): CORRECTIVE ACTION
Discard / empty spray bottle and fill with fresh
QUATS. QUATs should have a concentration of 200 ppm
or follow manufactures instruction. Operator refilled bottle
and retested (200ppm) (QUATs were detectable).

Foods were stored on the ground. The following items were
noted to be stored on the ground.

storage shelves
- Containers with cheese were stored on the ground in the walk - in - cooler

- All foods should be stored above the ground (at least 6 inches
or 15 cm high)

* GENERAL COMMENT
> Sanitation and Hygiene
- All hand sink stations were adequately supplied with
liquid hand soaps, paper towels, and running hot and
cold water.
- 3 - compartment sink was available and manual
ware washing was discussed with the operator 3
functional sink plugs were available.
- QUAT dispenser at the 3-compartment sink measured 200
PPM (QUATS).
- Chemicals were properly stored.
- General sanitation was satisfactory
- No pest activity observed during the inspection.
- Foods were properly stored in the dry storage area.

> Temperature Control
- Pizzas in the hot holding unit measured between
70 - 77 C ( surface and internal temperature).
- Beverage cooler measured 4 C
- Prep cooler measured 3 C
- Walk-in-cooler measured 2 C
- 2 door freezer measured -20 C

* Administrative
- FOODSAFE Level 1 certified staff was on site during the
inspection. Operator's FOODSAFE Level 1 is valid until January 1, 2025
- Permit posted in a conspicuous location.
